New Moon Ginger Cookies Recipe
Ingredients:
225g spelt plain flour
½ tsp bicarb
2 tsp ground ginger
100g softened butter
120g coconut sugar
100g malt extract
Instructions:
Preheat your oven to 190°C fan (170°C gas).
In a bowl, mix together the spelt flour, bicarbonate of soda, and ground ginger.
Add the softened butter and rub it into the dry mixture with your fingertips until it resembles sand.
Stir in the malt extract, and work the dough with your hands. The more you work it, the warmer and smoother the dough will become.
Divide into small balls (about 33g each) and place on a lined baking tray.
Bake for 10-12 minutes, or until just golden around the edges.
