Eggs Napoli with Chorizo and Caramelised Mushrooms
Ingredients
500gr white button mushrooms sliced
2 or 3 Spanish chorizos
1 large onion chopped
2 garlic cloves sliced
700g of organic passata
½ cup of water or stock of your choice
organic free range eggs (2 per person)
fresh chopped parsley and dried Greek oregano
Instructions
Start by sautéing the mushrooms in a generous drizzle of extra virgin olive oil (EVOO). Cook them over medium-high heat, seasoning with salt and pepper, until they’re beautifully golden and their flavour is rich and intense—seriously, mind-blowing! Once caramelised, remove from heat and sprinkle with dried oregano for that Mediterranean kick.
Next, brown your chorizos in the same pan until it develops a gorgeous crust. Do not cook through, remove and slice into chunky pieces—they’ll go back in later.
In the chorizo oil, sauté onion and garlic with a pinch of salt, cooking until soft and fragrant. Then, pour in the passata and the water or stock of your choice. Let it simmer gently, semi-covered, until the water evaporates and the sauce thickens slightly. About 5-10 minutes before turning off the heat, stir in the chorizo chunks to cook through and to let their spicy oils infuse the sauce.
Finally, fry your eggs to your liking—sunny-side up, soft yolk, however you love them!
To assemble:
Spoon the rich chorizo Napoli sauce onto your plate, gently place the eggs on top, add a generous helping of your golden mushrooms, then drizzle with fresh EVOO and finish with a sprinkle of chopped parsley or dried oregano.
